Will chickens lay eggs without a rooster? I'm farm ignorant.

A neighbor we had when we lived in CT had chickens, AND a rooster. For 9 months out of the year, no problem, but late spring and early fall, I like to sleep with the windows open. Damn rooster couldn't tell time and would crow pretty much randomly, 3 or 4 times a night, between midnight and 6 AM. Could be 1, 3, 3:30, etc.

I talked to the neighbor and the problem was solved as they had chicken for dinner that night.
